
QUINOA HALLOUMI SALAD

Ingredients
- Quinoa, ¼ cup uncooked
- Spinach, 2 large handfuls
- Almonds, slivered 1 tbs
- Halloumi, 50g sliced
- Cranberry, dried 1 tbs
- Protein of choice: salmon, tuna, boiled egg, chicken breast, chickpeas
Method
- Cook quinoa in a saucepan with 1 cup of water. Drain and place in serving bowl.
- Heat a small frying pan over medium-high heat and spray with olive oil. Sauté halloumi slices until golden, then place in bowl with quinoa.
Add spinach, almonds, cranberries and protein of choice to bowl.
