PIRI PIRI FISH TRAY BAKE

Serves 4 | Preparation time 5mins | Cooking time 25mins

 Ingredients

  • Red onion, 2 cut into wedges
  • Sweet potato, 300g peeled, halved lengthways, chopped
  • Corn, 8 cobettes
  • Fish fillets, 4 firm white fish (such as basa, snapper, barramundi, flathead)
  • Cherry tomatoes, 250g punnet
  • Portuguese chicken seasoning, 1 tsp
  • Extra virgin olive oil, 2 tbs
  • Lemon, 1 cut into wedges
  • Thyme, 6 sprigs fresh, leaves picked

Method

  1. Preheat oven to 220oC/200oC fan-forced. Add onion, potato and corn to a large roasting tray. Drizzle with 1 tbs oil. Bake for 10mins.
  2. Remove tray from oven. Add fish, tomato and seasoning. Drizzle with remaining 1 tbs oil over fish. Bake for a further 15mins or until fish is opaque and cooked through.
  3. Garnish fish bake with thyme, serve with lemon.
