QUINOA HALLOUMI SALAD

Ingredients

  • Quinoa, ¼ cup uncooked
  • Spinach, 2 large handfuls
  • Almonds, slivered 1 tbs
  • Halloumi, 50g sliced
  • Cranberry, dried 1 tbs
  • Protein of choice: salmon, tuna, boiled egg, chicken breast, chickpeas

Method

  1. Cook quinoa in a saucepan with 1 cup of water. Drain and place in serving bowl.
  2. Heat a small frying pan over medium-high heat and spray with olive oil. Sauté halloumi slices until golden, then place in bowl with quinoa.

Add spinach, almonds, cranberries and protein of choice to bowl.
